Berlingozzo

Berlingozzo is a delicious traditional cake prepared during the Carnival period, and it seems that it dates back to 1400, when it was made on the occasion of Shrove Thursday, known as "Berlingaccio" by the Tuscans. This is where the Tuscan term "berlingare" comes from, meaning to have fun and enjoy food in company. This cake is made with simple ingredients and is extremely easy to prepare, characterized by a soft and fluffy consistency, which makes it perfect for both breakfast and a snack.

Preparation

Start by whipping two whole eggs and two egg yolks together with the sugar. Add the grated orange peel, a pinch of salt, the Vin Santo and the oil. Incorporate the previously sifted flour and, finally, add the sachet of baking powder. The mixture obtained will be very soft; if necessary, you can add some fresh milk to adjust the consistency.

Butter and flour a ring shaped mold, then pour the mixture inside. Decorate it with sugar grain.

Cook in a preheated oven at 180°C for about 40 minutes.
